Fast, easy and delicious - this is enough for two people.
peel and cut a largish sweet potato into chunks.
heat a bit of olive oil to medium high and add a finely chopped garlic clove - cook until it starts to brown
add some vegetable broth (about a cup for a 10 oz sweet potato), the sweet potato and a bit of salt and pepper.
cut the heat back to a simmer, cover the pan and cook until most of the liquid has evaporated or is absorbed
remove the cover, crank up the heat to medium high and cook until the pieces brown on each side
salt and pepper if necessary
